To make life easier, I typically use a boxed brownie mix for the brownie layer and then follow the recipe from there. To be gluten-free, make sure you use a gluten-free brand of crispy rice cereal such as Erewhon Crispy Brown Rice cereal.

    Tracy Snyder Molina:  While this recipe as written isn't actually gluten-free, with a simple switch from Oreos to a gluten-free brand such as Glutino or our favorite Joe Joes from Trader Joe's, it makes a delicious treat for hot summer days or any time of year! Tip: Trader Joe's sells gluten-free peppermint-flavored Joe Joes seasonally and they are a perfect swap for mint Oreos. Otherwise, vanilla-flavored sandwich cookies work just fine.
